
The Mitosaya Herb Garden Distillery, built on a renovated herb garden in the vast forest of the Boso Peninsula, is Japan's first eau-de-vie distillery that uses botanicals and fruits grown in an environment as close to nature as possible and distills them using careful processes.
Taking advantage of the unique and aromatic characteristics of each distilled spirit, Senior Bar Director Hideyuki Saito has created cocktails that are interpreted from his own perspective. The cocktails include the rich Tommy's Margarita, which combines the fragrant and bittersweet taste of the black mitosaya NOCINO with agave nectar and orange aperitif,
We offer light highballs, which combine the rich aroma and flavor of Joshuhaku (a variety of plum) liqueur, which is slowly fermented for about a month and then distilled, with the aroma of whiskey and kumquat.

This year's bottle designs for each of mitosaya's spirits are the work of Aureliusz Kowalczyk, a Polish architect based in Tokyo. Reflecting his insight into everyday life, his work is drawn through a framework of straight lines and rules only known to the artist, and is carefully expressed through powerful brush strokes and speedy drawings, after a long period of consideration on how to express ordinary things. The label design was completed after the artist visited mitosaya to experience the environment and process, and shared many conversations and glasses.
This time, Aureliusz Kowalczyk also designed the "MITOSAYA COCKTAILS" menu for the Lobby Bar.

Mitosaya's LEMELONCELLO is made using domestic ingredients such as organic lemons from Kamogawa, Chiba Prefecture, lemon juice from a farm in Amatachiyama, Odawara, Kanagawa Prefecture, and thin-fruited Earl's melons from Miura City, Kanagawa Prefecture. The liqueur, which has a harmonious balance of sweetness and pleasant bitterness with the greenness of a refined cucumber, evokes the feeling of summer sunlight, and is finished off refreshingly with champagne and lychee.

Walnut and Tommy's Margarita 2,400 yen*

NOCINO is a dark brown walnut liqueur from Emilia-Romagna in northern Italy, characterized by its fragrant and slightly bitter taste. Walnuts harvested behind the PECCARY BEER brewery in Takato-cho, Ina-shi, Nagano Prefecture are soaked in vodka, and herbs and spices are added. The sweetness of honey harvested in Otaki, Chiba Prefecture is added to create a fragrant and slightly bitter black NOCINO. We used agave nectar and orange aperitif to create a rich Tommy's Margarita.

SUMMER NAVEL is a distilled liquor made by mitosaya every year using navel oranges from Eguchi Farm in Kumamoto Prefecture. It has a freshness like a bite of a navel orange, and a refreshing aroma that wafts through your nose from the vanilla from Madagascar added after distillation. It is a twist on the British cocktail Bramble using Shine Muscat and mint.

Kyoto Plum and Whisky Highball 2,400 yen*

JOSHUHAKU is a distilled liquor made from Joshuhaku, a variety of plum grown in the Aoya Plum Grove in Joyo City, Kyoto Prefecture, a region famous for its plums since the Edo period. This light highball is made by adding whiskey and the aroma of kumquat to mitosaya's eau de vie, which is extracted from the rich aroma of Joshuhaku, which is slowly fermented for about a month and then distilled.

The mitosaya STRAWBERRY SPRING is a strawberry distilled liquor made from strawberries grown in Otaki-machi, Chiba Prefecture, which have been carefully aged for two years, with a refreshing taste added with Yerba Buena mint and mitosaya bay laurel spirits. It has a sweet aroma and refreshing flavor, and is combined with berry and peach tea and grappa to create a fruity and aromatic cocktail.

Citrus-flavored rock martini 2,500 yen*

GRAND ORANGE is a liqueur with a rich orange aroma and refreshing taste. It is based on fragrant spirits made with plenty of orange peel, and is characterized by its deep aroma and soft mouthfeel that come from 24 months of long aging. We simply combined it with vermouth, gin and a small amount of bitters to create a cocktail that is somewhere between a mellow martini and a Negroni.
