Mitosaya was founded by eight members who share a love and passion for nature and distillation. Each professional is committed to using their individuality and skills to grow as a company.
Yuko Yamamoto
Illustrator/Director of mitosaya Inc.
At mitosaya, she is involved in the development of botanical products and food and drink in general. Of course, the map illustrations are also her own work. She graduated from the Textile Design Department of Kyoto Seika University. Using a variety of techniques including paper cutting, watercolor painting, and drawing, she is involved in bookbinding, advertising, product design, and more.
Yasutsugu Ishiwatari
Chief Operating Officer (COO) of mitosaya Co., Ltd. / Representative Director of WAT Co., Ltd.
At mitosaya, he is in charge of supporting the overall business and operations. He is involved in producing American craft brands such as "Blue Bottle Coffee" and "Dandelion Chocolate" from San Francisco that have come to Japan, and also operates cafes such as "CAFE&HALL ours" in Osaki and the craft coffee shop "Coffee Wrights" that foster local communities with handmade food.

Shigeharu Asagiri
Chief Technical Officer (CTO) of Mitosaya Co., Ltd. and Representative of Kyodo Shoji Coedo Brewery Co., Ltd.
At mitosaya, we provide equipment cooperation, technical support, and cooperation with raw material procurement and product sales routes. Based in Kawagoe, Saitama Prefecture, we are the representative of Coedo Brewery, which produces the highly acclaimed premium beer Coedo Beer, which is sold in Japan and 12 other countries around the world.
Ryutaro Inoue
CBO (Chief Botanical Officer) / Representative of Naeme Corporation, a corporation eligible to own farmland
At mitosaya, he is in charge of plant planting planning, maintenance, raw material procurement, etc. Based at his own farm in Kamogawa City, Chiba Prefecture, he produces and harvests about 100 kinds of herbs and edible flowers using completely natural farming methods.
Hideyuki Nakayama
CAO (Chief Architect Officer) / Representative of Hideyuki Nakayama Architects
He is responsible for the architectural design and supervision of mitosaya's distillery and related facilities. After working at Toyo Ito & Associates, he established Hideyuki Nakayama & Associates in 2007. Since 2014, he has been an associate professor in the Department of Architecture at Tokyo University of the Arts.

Hideyuki Yamano
CCO (Chief Creative Officer) / Representative of TAKAIYAMA inc.
He is responsible for the design of mitosaya's logo, bottles, labels, etc., as well as sign planning within the distillery.
Masaki Yato
CDO (Chief Digital Officer) / CEO of MYDO LLC
Directs the mitosaya website, online shop, etc. and is in charge of SNS management.

Yuko Yamamoto
Illustrator / Director, mitosaya Inc.
At mitosaya, Yuko Yamamoto is involved in the development of botanical products as well as food and beverages in general. The illustrations on the map are also by her. Graduated from Kyoto Seika University, Department of Textile Design. She is involved in bookbinding, advertising, and product design, using several techniques including paper cut-outs, watercolors, and drawings.

Shigeharu Asagiri is the Chief Technical Officer (CTO) of mitosaya, a company that provides equipment cooperation, technical support, and cooperation in raw material purchasing and product sales channels. He is the representative of Coedo Brewery, based in Kawagoe, Saitama Prefecture, which produces COEDO, a premium beer sold in Japan and 12 other countries around the world and highly acclaimed.
Ryutaro Inoue
CBO (Chief Botanical Officer) / Representative of Naeme Corporation
At mitosaya, Ryutaro Inoue is in charge of botanical planning, maintenance, and raw material procurement. Based on his own farm in Kamogawa City, Chiba Prefecture, he produces and collects over 100 varieties of herbs and edible flowers using completely natural farming methods.
Hideyuki Nakayama
CAO (Chief Architect Officer) / President, Hideyuki Nakayama Architects & Engineers
Hideyuki Nakayama designed and supervised the construction of mitosaya's distillery and related facilities. He established Hideyuki Nakayama Architects in 2007 after working for Toyo Ito & Associates, and has been an associate professor at the Department of Architecture, Faculty of Fine Arts, Tokyo University of the Arts since 2014.

Hideyuki Yamano
He is in charge of designing the logo, bottles, labels, etc. for mitosaya, as well as signage for the distillery.
Masaki Yato
Chief Digital Officer (CDO)/Representative of MYDO LLC
Responsible for the direction of mitosaya's website, online store, and SNS operation.
