一年に一度、この柑橘のマーマレードを作ることを楽しみにしています。どの柑橘も、木の上でしっかり完熟にさせてから収穫することで、皮の香りもより高く、果汁は瑞々しく豊か。庭との付き合い方が直結して味に出てくるのがこのマーマレードと言っても過言ではありません。
スタッフたちの手助けにより整った素材のパーツを、私は一気に合体させて、火によって一体化させる作業。結果の味は、素材が作ります。
庭の柑橘の美味しさが、そのまま詰まったようなマーマレードになってくれました。
最後に加えた蒸留酒は華やかな果実味の「UME DAMONO」、橙の他の柑橘を凌ぐ華やかさによく合いました。

I look forward to making this citrus marmalade once a year. Every citrus fruit is allowed to fully ripen on the tree before harvesting, which enhances the aroma of the peel and yields juicier, more flavorful fruit. The way we interact with our garden directly influences the taste of this marmalade; it's not an exaggeration to say so.

With the help of our staff, I combine the prepared ingredients all at once and unify them through cooking. The final taste is a testament to the quality of the ingredients. This marmalade is like a concentrated essence of the deliciousness of our garden's citrus.

The distilled spirit added at the end is the fruit-flavored "UME DAMONO" from mitosaya, which perfectly complements the vibrant taste of the oranges, surpassing other citrus fruits in its elegance.
