In the mitosaya garden, spring has finally begun, with buds sprouting and flowers beginning to bloom.
The cherry blossoms have already begun to swell, and I look forward to the time when the garden will be dyed pink. This is the time every year when I make this syrup.
Last year's cherry blossoms were salted, dried and stored, and will lie dormant for a year, waiting for this time of year.
Once you put it in water to remove the saltiness, your kitchen will be filled with the scent of cherry blossoms.
This year, I also boiled some fermented tea leaves in the pot to bring out the sweet aroma of sakura mochi. The gentle sweetness of the brown sugar makes it into a syrup that tastes like a candy.
Be sure to try it at your cherry blossom viewing party. Dilute it with carbonated water or hot water. Mix it with vinegar and oil to use as a dressing. It's sure to add color and aroma to your spring dinner table.

After releasing them into water to remove the saltiness, the kitchen is already filled with the scent of cherry blossoms.
