The fig mash we sold at the end of last year was very well received, so we decided to reproduce it using the same recipe.
The slightly sweet aroma of figs is complemented by sake lees, and the strong acidity is combined with balsamic vinegar, which has a mellow sweetness. It adds a soft sweet and sour aroma and a rich flavor to any dish, whether Japanese or Western.
Use it as a dipping sauce for hotpots. Use it to marinate meat before grilling to make it soft. Use it as a sauce for fried foods.

Due to the great reception of our fig moromi (fermented mash) sold at the end of last year, we have reproduced it using the same recipe. We've added sake lees, which pairs well with the subtly sweet aroma of figs, and balanced the strong acidity with the mellow sweetness of balsamic vinegar.
