This is an annual event where we make Kawashima fig brandy. After distillation, the mash has a strong sweet aroma and a refreshing acidity due to fermentation.

This moromi sauce was created to bring out that flavor. It's sweet, sour, and a little spicy. The sake lees added to this balance give it a soft aroma.

You can use it cold as a marinade for meat or fish, but we recommend using it as is as a hot pot dipping sauce. If you add hot ingredients, the aroma of the sake lees will be enhanced by the steam, making it very delicious. Please try it for hot pot during the cold season.

Ingredients: Fig distilled mash, sake lees, granulated sugar, balsamic vinegar, white wine vinegar, soy sauce, chili pepper
