APPLE AND JAPANESE PEPPER JAM / Apple and vine jam

A lot of naturally grown apples were delivered from Tohoku for sake brewing. We were given some of them to make into jam.

The apples, stewed while still retaining their shape, are paired with the baguette vine. Baguette vine is a vine that grows wild in the mountains and grows by twining around trees. The fruit that grows in winter turns red and has a spicy aroma and taste similar to peppercorns. I was given a lot of them growing wild near Naeme on the Kamo River.

The small red fruit floating in the transparent apple is adorable to look at, but when you bite into it, you can taste a unique spiciness that belies its cute appearance. (Please remove any cardamom that is left in the bottle as a flavoring.)

Ingredients: Apple, sugar, bagasse (seedling/Kamogawa), cinnamon, cardamom, lemon, "LEMON POI"

A lot of naturally grown apples were sent from Tohoku to be used for brewing sake. I was given a portion of them to make jam.

The apples were stewed in their original shape, and the combination was made with houttuynia japonica. Foutoukazura is a vine that grows naturally in the mountains, entwining itself around trees. The fruits that appear in winter are red in color and have a pungent aroma and taste like peppercorns. I was given many of these growing wild in the vicinity of Miaome in Kamogawa.

The small red berries floating in the transparency of the apple look lovely, but when you bite into them, you can feel a unique spicy flavor despite their cute appearance. (Remove the cardamom, which is left intact in the JAR for flavoring, as needed.)
