mitosayaの隣町、睦沢町で育った紅はるかから生まれたさつまいもの蒸留酒を、オーク樽で3年間じっくりと熟成させました。 原料は、干しいも「むつぼしいも」の製造工程で生まれる、皮を含む実の部分。最も香り高いその部位を活かし、麹を使わずに発酵・蒸留することで、さつまいも本来のフローラルでトロピカルな芳香を引き出しています。

AGED POTATOでは、2023年1月から3月にかけて蒸留した原酒を使用。にこの透明で華やかなスピリッツをオーク樽で3年間熟成し、時間と木の作用によって、角の取れた丸み、バニラやキャラメルを思わせる甘やかなニュアンス、そして奥行きのある余韻が加わりました。

さらに、りんごのオードヴィーを少量ブレンド。熟した果実のようなみずみずしい酸と香りが重なり、さつまいもの甘さに立体感を与えています。

さつまいものブランデーと呼びたい軽やかな香りに、樽由来のスパイスと深み。やわらかさと芯の強さが同居する一本です。

まずはストレートで、香りの変化をゆっくりと。時間とともに立ちのぼる果実香と樽香の重なりをお楽しみください。ロックや少量の加水でも、甘やかな広がりがより感じられます。

AGED POTATO is distilled from Beniharuka sweet potatoes grown in Mutsuzawa, the town next to mitosaya, and matured slowly in oak casks.

The base material comes from the most aromatic part of the sweet potato — the flesh with skin — left over from producing dried sweet potatoes “Mutsuboshi-imo.” Fermented and distilled without koji, it reveals the sweet potato’s pure floral and tropical aromatics.

This clear and vibrant spirit is then aged in oak for two years. Time and wood soften the edges, adding gentle roundness, notes of vanilla and caramel, and a deep, lingering finish.

A small amount of apple eau-de-vie is blended in, layering fresh acidity and ripe fruit aroma, giving dimension to the natural sweetness of the sweet potato. Light and fragrant like a sweet potato brandy, with oak-derived spice and depth.

Enjoy neat first to appreciate the evolving aromas. On the rocks or with a splash of water, its sweetness opens further.
