花梨を使ったシンプルで香り豊かなオードヴィー。

冬のフルーツの中でも、花梨は特別な存在。

上品でむせかえるように甘やかな香りがある一方で、果肉は硬くて果汁もほとんどない。その魅力をなんとか液体にしたく、新潟の阿部農園から150キロの花梨を送ってもらいました。

さらにmitosayaで採れた実も加え、マッシャーで粗く砕き、時間をかけて発酵させてから蒸留。得られたのは、わずか20リットルほど。あの香りが凝縮された透明の液体を、小さなグラスでゆっくりどうぞ。

A simple yet highly aromatic eau-de-vie made from quince.

Among winter fruits, quince holds a special place.

It carries an elegant, almost intoxicating sweetness in its fragrance, yet the flesh is hard and yields very little juice. Wanting to capture that unique character in liquid form, we sourced 150 kilograms of quince from Abe Farm in Niigata. We also added fruit harvested at mitosaya, crushed it coarsely, allowed it to ferment slowly over time, and then distilled it. The result was just about 20 liters.

A clear spirit in which that remarkable aroma is beautifully concentrated—best enjoyed slowly in a small glass.
