This eau-de-vie is made from domestically grown bananas donated by Boso Banana, which cultivates bananas without the use of pesticides in the Satoyama area of Futtsu City, Chiba Prefecture. Taking advantage of the location, only an hour away from mitosaya, they delivered perfectly ripe Gros Michel bananas. The fruit is so ripe that you can peel it off with your hands, and it has a rich sweetness and an overwhelming fragrance.

The luxurious product is made using only the fruit pulp, slowly fermented with yeast, and then distilled to create a sweet and elegant product with concentrated banana-specific aromatic component, isoamyl acetate.

Due to extremely limited production, it will only be available in mini bottles. It will be available only to mitosaya pals members and sold at mitosaya YA stores.

Eau de Vie Made from Japanese Bananas

This eau de vie is made from Japanese-grown bananas sourced from Boso Banana, a farm located in the satoyama woodlands of Futtsu, Chiba Prefecture, where bananas are cultivated without the use of any agricultural chemicals. Just an hour's drive from mitosaya, the farm supplied us with perfectly ripe Gros Michel bananas—so mature that their skins peeled away effortlessly by hand. The fruit offered an intense sweetness and a heady, tropical aroma.

Using only the flesh of the bananas, we added yeast and allowed the mash to ferment slowly and naturally. The distillation was also done gently and with care, resulting in a rich and elegant spirit, concentrated with the signature banana aroma compound—isoamyl acetate.

Due to the extremely limited quantity, this spirit is available produced in mini bottles. It will be exclusively offered only to mitosaya pals members and at mitosaya's YA store counter. Please visit us at YA for a tasting experience.
