Due to the COVID-19 pandemic, restaurants have been closed, and wine shipments have been cut off. Although the quality is still good, they were looking for a way to reuse boxed wine that had missed its prime. The wine was Sauvignon Blanc from Chateau Les Graves in Bordeaux. Mitosaya decided to distill the wine and regenerate it into brandy.

The distilled brandy is aged in barrels that were used to age the AFS series at Kidoizumi Brewery in Chiba. The fruity aroma of white wine is complemented by the gentle roundness and depth of two years of barrel aging, resulting in a well-balanced flavor. When you put it in your mouth, the sweetness of ripe fruit and subtle spice nuances spread, and the aftertaste is long and pleasant.

The wine takes on a new form over time - as the name "SABLIER" (hourglass), which symbolizes the passage of time, suggests, please enjoy the flavor that changes over time.

This bottle was born from a suggestion from Imadeya, a liquor store in Chiba, about how to make the best use of a white wine that is past its prime.

The wines lost their chance to be shipped due to the new coronavirus, which restricted restaurant business. They were looking for another way to make use of the boxed wine, which was of good quality but had missed its prime drinking period. The wine was a Sauvignon Blanc from Château Les Graves in Bordeaux, which they decided to distill at mitosaya and recycle as a brandy.

The distilled brandy was aged in the same barrels used to age the AFS series at Kidoizumi Brewery in Chiba. The fruity aroma derived from white wine is balanced by the gentle roundness and depth added by three years of barrel aging. In the mouth, the sweetness of ripe fruit and subtle spice nuances spread out, and the lingering finish is long and pleasant.

The wine takes on a new shape over time, and as the name “SABLIER” (hourglass) implies, you will enjoy the way the flavors change over time.
