This liqueur has a natural sweetness and rich flavor, and is made using sweet potatoes grown in Mutsuwa Town, Chosho District, Chiba Prefecture, a town next door to mitosaya, and brown syrup made from sugar cane in Isumi.

Mutsuzawa Town is located between the sea and the mountains, and is a tranquil area with a rural landscape. In this town, they grow sweet potatoes and dried sweet potatoes on abandoned farmland. This is where "Mutsuboshiimo" sweet potatoes are produced. The variety cultivated is Beni Haruka. It is characterized by its high sugar content and moist texture, and its high maltose ratio gives it a refined sweetness.

Beni Haruka is planted in late spring, cultivated for about five months, and harvested from autumn to winter. The sugar content at harvest is about 9 degrees. By aging in a refrigerated storage facility with a low temperature and high humidity environment, the sugar content increases to 14 degrees.
They are then washed, sorted and steamed using local natural gas, after which the potatoes are peeled with a knife, sliced and laid out flat to dry.
The Wanted Things Project, which was started by the Mutsuwa Town Post Office, has now grown significantly with 26 farmers involved.

At mitosaya, we use the parts of the fruit, including the skin, that are generated during the hoshimo processing process as raw materials. Although it is not used for hoshimo, the part around the skin is actually the most fragrant.
After aging, saccharification, and steaming to soften it, it is perfect for making alcohol. After adding hot water to bring it to the optimum temperature for fermentation and adding yeast to ferment it, it is cooled strongly and distilled to bring out the aroma.

The distilled liquid has a floral sweet potato aroma and a sweet taste. Because no koji is used, the pure aroma of the sweet potato can be brought out. The light, fruity aroma reminiscent of tropical fruit is just like a sweet potato eau-de-vie.

After aging this liquid in oak barrels, we add a caramel-like sweetness with black honey made from sugar cane in Isumi City. You can enjoy a rich flavor that harmonizes with the warm, natural sweetness. Please enjoy this luxurious after-meal drink as a refined drinkable dessert.
It also goes great with ice cream and pudding.

Mutsusawa-cho, Chosei-gun, Chiba Prefecture, a neighboring town of mitosaya, is located between the sea and mountains, and is a peaceful land with a satoyama landscape. In this town, sweet potato cultivation and hoshi-imo production are carried out using abandoned farmland. The sweet potatoes grown in the town are "Beniharuka" (red faruka). It is characterized by its high sugar content and moist texture, and has a refined sweetness due to its high maltose content.

Red Haruka is planted in June and cultivated for about 5 months. Sweet potatoes harvested in the fall and winter have a sugar content of about 9 degrees. The sugar content rises to 14 degrees by maturing in refrigerated storage in a low-temperature, high-humidity environment. They are then washed, sorted, and steamed using local natural gas. The sweet potatoes are ready when you stick a splittable chopstick through them and it goes right through. The steamed sweet potatoes are then peeled with a knife, sliced, and laid flat to dry. This is how hoshi-imo is made.

Mutsuboshi-imo, a hoshi-imo started by the Mutsuzawa-cho post office, has now become an industry in the town with 26 farmers involved. At mitosaya, the dried hoshi-imo is used to make sake from the fruit, including the skin, that is produced during the drying process. The skin is actually the most aromatic part of the fruit, which until now has not been used. After maturation and saccharification, as well as steaming to soften it, the berries are fermented with hot water and yeast to reach the optimum temperature for fermentation, and then distilled to bring out more aroma by intensifying the cooling process.

The distilled liquid has a floral sweet potato aroma and sweet flavor. Since no malted rice is used, the pure aroma of sweet potatoes can be brought out. The fruity and light aroma like tropical fruits is truly an eau de vie of sweet potatoes. You can enjoy the rich flavor in harmony with the warm natural sweetness.

After this liquid is aged in oak barrels, a caramel-like sweetness is added with molasses made from Isumi sugarcane. You can enjoy the rich flavor in harmony with the warm, natural sweetness.
