Essence of Tree-ripe Oishi Wase Plum

This is an annual eau-de-vie made from ripe plums harvested by the chefs themselves, grown close to the fruit line in the Kofu Basin.
The plum trees, planted at an altitude of about 500m on a gentle, windy slope, are about 40 years old. The Oishi Wase variety is similar to Soldam and is characterized by its large fruit. However, when fully ripe, the fruit becomes very soft and unsuitable for transportation, so they are often shipped before they are fully ripe.
After the usual shipping has ended, we climb onto a stepladder and pick the remaining plums, large and ripe, so big they look like they might burst, one by one by hand. We harvest about 500 kilograms of plums. The downy skin of the plums is clearly yeast-laden, so we gently crush them and then ferment them with natural yeast.
After a few days of slow movement, vigorous fermentation begins. The smell of ethyl acetate and sulfur appears and disappears mysteriously. After several days of bubbling fermentation, the liquid gradually calms down and the lees floating on the surface begin to sink, a sign that most of the sugar has been consumed. After about three weeks of brewing, it was carefully distilled.
This time, it was aged for a year in stainless steel tanks. It is a pure and clear plum eau-de-vie with the elegant aroma and flavor of fully ripe plums.

This annual eau de vie is made from ripe plums grown near the fruit line in the Kofu Basin, which we harvest ourselves.
The trees are planted on a gentle wind-swept slope at an altitude of about 500 meters and are about 40 years old. The Oishi early ripening variety is similar to the Soldam variety and is characterized by its large size, but when fully ripe, it becomes very soft and is not suitable for transportation.
The large, ripe, and almost ripe fruits left over after the normal shipping is completed are hand-pulled one by one on a stepladder. About 500 kg of plums are harvested. The hairy epidermis is covered with yeast, which is gently crushed and then brewed with natural yeast.
After a few days of slow movement, vigorous fermentation begins. The ethyl acetate and sulfur smells appear and disappear mysteriously. After several days of bubbling fermentation, it gradually settles down, and when the lees floating on the surface of the liquid begin to sink, it is a sign that the sugar has almost been eaten up. After about three weeks of brewing, it was carefully distilled.
This time, it was aged in old oak barrels for 10 months, resulting in a pure, rich plum eau-de-vie with added deep aroma and flavor.
In addition, only the full bottle has dried plums, freshly picked this year, submerged in the bottle. Please taste it with fresh fruit flavors.
