This eau-de-vie is made using loquats grown in an extremely natural environment in the mountains managed by AMBESSA in Minami Boso.

There are three large loquat trees on the mountains of AMBESSA, with loquat fruits hanging from the trees as they grow wildly. We climb the trees to the upper parts, where even a stepladder cannot reach, and shake the branches to knock them down, over the course of several hours we harvest 54kg of loquats.
Although small, the firm fruit has a gentle loquat scent. Once gathered, the scent is strong, and the down on the surface seems to have good yeast on it, so fermentation begins the day after you bring it home without adding anything. After one week, add 5kg of organic sugar to keep the fermentation going.
It is left to ferment for three weeks to soften the aroma and sourness, and then distilled. A broad aroma that brings out the sweetness of loquat is released.

A rich and soft eau-de-vie that captures the full flavor of Boso loquats. Only 70 mini bottles have been produced, making this a rare product.

The AMMBESSA mountain has three large loquat trees that grow wildly, and the loquat fruit grows in bells on the trees.
The small but firm fruits have a mild loquat aroma. After a week, 5 kg of organic sugar is added to keep the fermentation process going.
After 3 weeks of slow fermentation, when the aroma and acidity soften, the distillate is distilled. The aroma is broad and expansive, as if the sweetness of the loquat has been further refreshed.

A rich and soft eau-de-vie that tastes everything about the loquat of Boso. Only 70 bottles are available in miniature bottles, making it a rare find.
