094 SUZAKA NECTARIN

A fruit brandy made from nectarines harvested in Suzaka City, Nagano Prefecture.

Nectarines are a variety of peach that are not hairy like peaches and have smooth flesh that can be eaten with the skin on. They have a stronger sour taste than peaches. We divided 100 kg of nectarines into two batches and fermented them using two types of yeast, one for wine and one for sake, to compare their progress. Both fermented well, and after two weeks, when the pungent alcohol smell had subsided, the alcohol content had reached 10%. After distillation, it was aged in glass flasks.

It's not supposed to be sweet, but you can definitely smell its rich sweetness. Please compare it with "WHITE ICHIMIYA PEACH".
