This eau-de-vie is made using Joshu White, a variety of plum grown in the Aoya Plum Grove in Joyo City, Kyoto Prefecture, a region known for its plums since the Edo period.
Akio Tanaka, the representative of Aoya Ume Koubou, started this workshop to preserve the large-sized and fragrant Joshu White plums for future generations. His love for plums is so strong that it is almost enviable.
In 2023, we received large, beautiful, lemon-colored ripe plums in several batches starting in late June. The soft, plump aroma is like that of plums, enveloping the air with an enchanting aroma. Plums, which are highly acidic, are not naturally very good at alcoholic fermentation. Therefore, with the help of yeast, enzymes, and sugar, we slowly fermented them for about a month and distilled them.
Although it contains no sugar, it is certainly sweet when you drink it. Please enjoy the rich aroma and flavor of Joshu Shiro.

Eau-de-vie made from Jōshū-haku, a variety of ume grown in Kyoto's Jōyō City that has been around since the Edo period. Akio Tanaka, the representative of the company, started the Aotani Ume Workshop to preserve the large grains and strong aroma of Jōshū-haku. Hence, his love for ume is almost enviable. In 2023, we were sent beautiful, large, lemon-ripe plums in several batches starting in late June. Their soft, full-bodied aroma, like that of peaches, is intoxicating. Ume, with its high acidity, is not naturally good at alcoholic fermentation. Therefore, we distilled it after about a month of slow fermentation with the help of yeast, enzymes, and sugar.
Although it is supposed to have no sugar content, it is indeed sweet when drunk. Please enjoy the rich aroma and taste of Jōshū-haku.
