秋になると鈴なりになるグアバの黄色い実。毎日欠かさず熟したものを採っては集めて、7キロになりました。蒸留機が新しくなり、いよいよもろみも各種出てくるというタイミングで御子神くんから渡されたのが、石垣島のパイナップルの蒸留もろみ。グアバとの組み合わせは良さそうということでこんなジャムができあがりました。

発酵感のあるもろみの香りとトロピカルフルーツの甘い雰囲気をピリッと引き締めるしょうがも、mitosayaの庭の土から掘ったばかりのものを使用しました。ヨーグルトやチーズに良く合います。お肉料理のソースとしても。グアバの種がかりっと歯にあたります。少しだけ、気を付けてくださいね。

Golden guavas ripen in abundance each autumn. We carefully picked the ripe fruits daily until we had about seven kilograms. Around that time, with the new still ready and various moromi (fermentation mash) in production, we received a batch of pineapple moromi — the combination with guava felt perfect.

This jam blends the fermentation aroma of moromi with the tropical sweetness of guava and pineapple, sharpened by freshly dug garden ginger. Excellent with yogurt or cheese, and delicious as a sauce for meats. Beware of the crunchy guava seeds — a small reminder of the fruit’s natural charm.
