Finally, I have completed the jam with this combination. I used a lot of jasmine flowers this summer. I thought that their gorgeous fragrance and sweet taste would go well with Le Lectier pears, which come every winter, so I carefully stored them in the freezer, looking forward to the day when I could make jam with them, so that no one would steal them.
This year, we received a wonderful Le Lectier from Abe Farm in Niigata. We secured some immediately after preparing the sake, and started making the jam. It is in a natural shape with the flesh still intact. We added plenty of fragrant turnip juice from the garden. Organic jasmine flowers from Shizuoka add a pleasant texture and gorgeous fragrance.
"Hanabana," a distilled liquor made to resemble watermelon sugar and made with various flowers, is also a good combination.

At last, this long-awaited combination of flavors has come to life in this jam. This summer, we used plenty of jasmine flowers, with their radiant fragrance and sweet taste. From the start, I imagined they would pair perfectly with winter's annual arrival of Le Lectier pears. Eagerly anticipating this day, I carefully stored the flowers in the freezer, ensuring they would remain untouched until the time was right.
This year, we received another delivery of magnificent Le Lectier pears from Abe Farm in Niigata. Securing some from the batch before it was used for distilling spirits, we began crafting this jam. Preserving the natural texture of the pear flesh, we added an abundant amount of fragrant juice from our garden's bitter orange. The addition of organic jasmine flowers from Shizuoka lends a delightful texture and a floral aroma.
This jam pairs beautifully with “hanabana,” our distilled spirit inspired by the idea of watermelon sugar, crafted with watermelon and various flowers.
