柿の葉は発酵するとまるで焼き菓子のような甘い香りに。その発酵茶を更に銅鍋でじっくり焙じ、香ばしさを加え、肉桂の葉、肉桂の根の甘い香り、黒文字の清々しさをブレンド。
葛の花、萩の花がお茶の中で揺らめく美しく、巡る季節によく合うお茶になりました。
ひと冷ましした湯を注ぎ、通常よりもゆっくり待ってみてください。渋みが強くなることはなく、甘みと複雑味が増していきます。
このお茶は、「てのしま 秋の恵みを楽しむ食事会」で、柿の羊羹と共に提供させていただきました。和のお菓子ともとても相性が良いのでおすすめです。

When fermented, persimmon leaves have a sweet aroma like baked goods. The fermented tea is further roasted slowly in a copper pot to add fragrance, and blended with the sweet aroma of ku gui leaves and ku gui root, and the freshness of kuromoji.
Kudzu flowers and hagi flowers shimmer in the tea, creating a beautiful tea that goes well with the changing seasons.
Pour in one cup of cooled water and wait longer than usual. It will not become more astringent, but sweeter and more complex.
We served this tea with persimmon yokan at the “Tenoshima Autumn Blessings Party“. We recommend it as it goes very well with Japanese sweets.
