Persimmons and plums are two very familiar fruits. However, surprisingly, these two types are rarely combined together.
I had been looking for an opportunity to make a summer jam using persimmons that I had harvested in the fall and frozen to preserve beyond the season. When lovely yellow, ripe plums started to fall one by one from the plum tree in my garden, I had an idea.
The persimmon gently wraps around the strong sourness of the plum, and the plum balances out the weak sweetness of the persimmon. The two fruits are like close siblings.
To create a summery jam, add plenty of lemon, lemon-scented herbs, and finish it off with a refreshing lemon gin.
The sharp tartness and sunny orange color will soothe your summer fatigue and invigorate you.

Harvested in autumn, we aimed to turn frozen persimmons beyond the season into summer jam.
When the cute, fully ripe yellow plums fell from the plum tree in the garden, we came up with this idea. The strong acidity of plums envelops the gentle sweetness of persimmons, and the unreliable sweetness of persimmons tightens plums. The two fruits seem to be good friends like brothers. To make it into summer jam, we added plenty of lemon, lemon-scented herbs, and finished with lemon gin.
Its sharp sourness and orange color like the sun seem to heal summer fatigue and energize you.
