This is a versatile cooking sauce made from a mash made from distilled navel orange liquor.

The sake lees add a subtle sweetness to the mash, which retains the bitter and sour taste of citrus. The spice I added was pepper, which I encountered on my trip to Yaeyama, which has an interesting peppery aroma and a hot, spicy chili pepper flavor.

It can be used as a sauce for marinating meat or fish, or as a dressing. Please use it in your favorite dishes, whether Western or Japanese.
