A large kiwi tree is quietly entwined with its vines on the shelves behind the mitosaya greenhouse, in the shade of the passage. Since I started gardening, I have been pruning the kiwi branches properly, and this year I was able to harvest nearly 40 kilograms, compared to a bucketful before. I set aside some of it to make jam.
Kiwi fruit ripen at different times, so we gradually put the best ones in the sugar. The first ones we put in the sugar began to ferment slightly, and changed into a soft flavor like enzyme syrup.
Refreshing, sour, and green - I think everyone has this image in their mind, but the aged kiwi is like a fully ripe muscat, with a deep aroma that makes you think it might turn into wine at any moment. The strong aroma of laurel and the grappa added at the end are also accents drawn from this connection of images.
Its beautiful, deep green color goes well with anything, from bread to cheese to yogurt.

A large kiwi tree is hidden away behind the house in the mitosaya garden, in the shadow of the pathway, its tendrils twining here and there around the trellises. I have been pruning the kiwi branches well since I started working in the garden, We have harvested nearly 40 kilograms of kiwis this year, instead of about a bucketful. I set some of them aside to make jam.
The kiwis ripened at different times, and as we dipped the best ones into the sugar, the first ones began to ferment a little, developing a soft, enzyme syrup-like flavor.
