The birth of this fermented tea gave mitosaya a sense of anticipation of a new journey in its tea making.
This spring, mitosaya was tasked with providing alcohol and ingredients for the drink pairings at Copenhagen restaurant Noma's Pop up in Kyoto.
In the tea section, I was providing ingredients for blends and infusions, and one day, Carolyne, who was in charge of the tea section, suggested that I make tea by oxidising cherry blossom leaves. She taught me her method, and I fermented cherry blossom leaves in my own way using the equipment and tools I had, and the process of making the tea was full of moving experiences.
I'm sure there are many people who, when passing by a cherry blossom tree, suddenly feel like they smell sakura mochi (cherry blossom rice cakes). That scent comes from this tea. After being slowly brewed, the scent lingers in the cup even after drinking. For Japanese people, the cherry blossom is a special tree. You will surely be able to feel this nostalgic, sweet scent even after the cherry blossom season has passed.
This tea is featured on Noma Copenhagen's summer menu, and we've reserved some for you.
This is a mitosaya original blend of simply dried cherry blossoms.

The birth of this fermented tea was the beginning of a new journey for mitosaya's tea production. This spring mitosaya was given the role of providing drinks and ingredients for the drink pairings at the Noma Copenhagen pop up in Kyoto.
The tea section was providing ingredients for blends and infusions, and one day Carolyne, who was in charge of the tea section, suggested that we make a tea by Oxidizing Cherry Blossom Leaves. She taught me her process and I fermented the tea in my own way using my own equipment and tools.
I am sure that many people, when passing by a cherry tree, suddenly felt that they could smell the aroma of sakura mochi (cherry blossom cake). This tea has that aroma. The aroma after slow brewing remains even in the cup after drinking.
It lingers even in the cup after drinking. Cherry trees are very special to the Japanese. You will surely feel this nostalgic sweet aroma even after the cherry blossom season has passed.
This tea is also on the summer menu at Noma Copenhagen. We have also secured it for you.
It is a mitosaya original, a simple blend of dried cherry blossoms.
