At mitosaya, we can roughly divide our work into two parts: the part that makes the alcohol and the part that makes the other products, but Mikogami-kun, the brewer, often throws interesting materials at me. Most of them are materials that are left over after distillation, and moromi is one of them.
Sometimes the requests are too unreasonable and I end up not being able to use them, but I try to think carefully about what I can use if possible, and accept them before they are thrown away.
The theme this time is the dried cherries that were left over after straining during the pickling process when making " SAKURAMARO ."
The strong alcohol makes me dizzy just by smelling it, but it was originally made from high-quality organic dried fruit purchased from Anbessa in Minamiboso. It would be a shame to throw it away.
It took some ingenuity to make the jam, but it was thick and sweet, and even after it was completely boiled down, the aroma of the alcohol remained, making it a viable jam. I would recommend the finished product to both alcohol lovers and non-lovers alike. It has the same scent as "SAKURAMARO," and the moment you put it in your mouth, the aroma of cherry blossoms spreads softly.

Sometimes the materials are too reckless to be used, but I am eager to take on the task with a clear mind, hoping that I can use them before they are thrown away. This time, the subject was dried cherry fruit left over after straining it through pickling when I made " SAKURAMARO . The strong alcohol content was so strong that just smelling the aroma was enough to make me feel woozy, but the dried cherries were high quality organic dried fruit from Ambessa in Minami-Boso. It would have been a shame to throw them away. It took some work to turn it into a jam, but it turned out to be a viable jam, thick, sweet, and fully cooked, with the aroma of the alcohol still present. We hope that both sake lovers and those who do not enjoy sake will give the finished product a try. The aroma is the same as that of "SAKURAMARO," and as soon as you put it in your mouth, the aroma of cherry blossoms will spread softly.
