PLUM SWEET PICKLES / 梅のスイートピクルス

昨年の夏に収穫した梅を、約半年間蒸留所内のセラーでピクルス液に漬けて保管しました。硬かった実は甘酸っぱいピクルス液をたっぷりと含み、今にも破けそうなくらい。

使用した酢はビネガーになった自家製ワインを煮切ってアルコールを飛ばして使用したため、味わいはとっても贅沢。そっと瓶に詰めて、咲いたばかりの梅の蕾と蝋梅を入れて、季節を一巡りした甘いピクルスができあがりました。口に含んだとたんにとろっと溶ける果肉に思わず笑顔になってしまいます。

瓶のピクルス液は、白湯にひとさじふたさじ加えて梅花茶に。塩気もあるのでじわっと体を温め、元気をくれます。春の節句のお料理の前に、甘酒の代わりに小さな器に注いでいただくのもおすすめです。

The plums were harvested last summer and stored in pickling liquid in the distillery's cellar for about six months. The hard berries were so full of the sweet and sour pickling liquid that they seemed ready to burst.

The vinegar used was homemade wine that had been turned into vinegar and then boiled off to remove the alcohol, so the flavor was very luxurious. Gently bottled with freshly bloomed plum buds and wax plums, the sweet pickles were ready to go around the season. The pulp melts in your mouth and makes you smile.

The pickle liquid in the jar is added to a spoonful or two of white water to make ume flower tea. The salty taste will warm you up and give you energy. We also recommend pouring it into a small bowl instead of amazake before a spring festival meal.
