GRAPE AND AKAJISO JAM / Grape and red shiso jam

A friend who was running errands with me that morning invited me to come with him to a greenhouse filled with ripe grapes.

Apparently, these grapes were carefully grown without pesticides by my friend's grandfather.

I was given a basket full and immediately made jam. I added lots of red shiso (perilla) that was growing wild in my garden and doing well (?) to match the aroma.

The amount of pectin added has been kept to a minimum, resulting in a fairly light finish, but the aroma and flavor are still very concentrated. Try it as an accent for yogurt or glass desserts, or be careful not to spill it when putting it on bread.

Ingredients: Grapes (Isumi City), granulated sugar, lemon, "BLESSED BASIL" (distilled liquor/mitosaya), pectin (derived from apples and quince)
Capacity: 140g
