「これからぶどうをもらいにいくんですが一緒にどうですか」と、午前中の用事を一緒にしていた友人から誘われていったハウスには、たわわに実ったぶどうが。
友人の祖父が無農薬で大切に育ててきたぶどうだそうです。
カゴいっぱいに分けてもらい早速ジャムに。庭に自生し元気に育ってしまった(?)赤紫蘇をたっぷり加えて香りを合わせてみました。
ペクチンの添加を最小限にしたためだいぶさらっとした仕上がりになりましたが、香り、味わいはしっかり濃縮しています。ぜひヨーグルトやグラスデザートのアクセントに、パンにのせるときは、どうぞこぼさないように気をつけてくださいね。
原材料:ぶどう(いすみ市)、グラニュー糖、レモン、「BLESSED BASIL」(蒸留酒/mitosaya)、ペクチン(りんご、かりん由来)

I was invited by a friend who was running an errand with me in the morning, and we went to a greenhouse where there were grapes in abundance.
They were grapes that my friend's grandfather had carefully cultivated without pesticides.
I was given a basket full of them and immediately made jam with them. The grapes grew wild and vigorously in the garden (?). I added plenty of red shiso to combine the aromas.
The addition of pectin was kept to a minimum, so the result is much lighter, but the aroma and flavour are concentrated. Please use it as an accent in yoghurt and glass desserts, and be careful not to spill it when you put it on bread.
Ingredients: Grapes (Isumi City), granulated sugar, lemon, "BLESSED BASIL".(Pectin (from apples and quince).
