I received a large amount of strawberries from Takanashi Farm in Otaki, and was able to make a lot of jam using some of the strawberries from the sake brewing. Since I was advised that strawberry jam should be made over high heat and with great determination, I stuck to that and boiled it down with great determination all at once. The process of making the jam transparent was fun, and I think it turned out to be a delightful end product.
This time, there are three luxurious flavors. The added sourness is also different, and each flavor is designed to bring out its individuality. The alcohol added at the end is difficult to retain because it is highly volatile, but I think it adds a nice accent to the flavor.

A large amount of strawberries arrived from Takanashi Farm in Otaki, and we were able to make a lot of jam by sharing some of the distillate preparation. I was taught to cook strawberry jam over high heat. I followed this instruction and boiled down the strawberries in one go.
The process of making it transparent was fun, and I think it turned out to be a delightful result.
This time, we were extravagant and used three different flavors. The acidity added was all different, and the composition was made so that the individuality of each would come to life. The distilled spirit added at the end is volatile and difficult to control, but I think it adds a nice accent to the flavor.
