今年も南房総のAMBESSAからシュトレンが届きました。
ヴィーガンシュトレンは、素朴な姿ながら、素材はすべて厳選したものばかり。小麦とライ麦は彼らの圃場で無肥料・無農薬で栽培し、石臼で丁寧に自家製粉しています。 アーモンドプードルや夏蜜柑ピールは自家製。
AMBESSA自家製のドライフルーツが、自然栽培のりんごを木桶で発酵させてつくる mitosaya のオードヴィー 「KIOKE APPLE」 に漬け込まれています。
自然のリズムとともにあるAMBESSAの暮らしと手仕事が、そのまま風味の豊かさとなって表れています。

日を追うごとに生地となじむナッツやスパイス、KIOKE APPLE に浸したドライフルーツの深い香り。アドベントの時間を楽しみながらお召し上がりください。
ラッピングにはシルクリボンを使用し、ライ麦の茎は“Rye Straws”として新しい形へ。今年もAMBESSAの想いとともに、特別なシュトレンをお届けします。

This year, the vegan stollen from AMBESSA in Minamibōsō has arrived once again.

Humble in appearance yet made only with the most carefully selected ingredients, their stollen begins with wheat and rye grown in their own fields in Minamibōsō City, cultivated without fertilizers or pesticides and freshly milled on a stone mill. The almond powder and summer orange peel are also prepared in-house.

AMBESSA’s dried fruits are soaked in mitosaya’s Eau de Vie “KIOKE APPLE”, distilled from naturally grown apples fermented in traditional wooden vats. The rhythm of nature and the daily handwork that define AMBESSA’s way of life are reflected directly in the depth and richness of its flavor.

As the days pass, nuts, spices, and fruits infused with KIOKE APPLE gently meld into the dough, making the stollen a perfect companion throughout the Advent season. Finished with a real silk ribbon and accompanied by rye stems reborn as “Rye Straws,” this special stollen carries AMBESSA’s thoughtful craftsmanship into your holiday table once again.
