At mitosaya, we make distilled spirits from a variety of lavender varieties.

The first project we undertook in 2019 was the “Dentata” variety of lavender, grown as seedlings without pesticides or chemical fertilizers.
This sweet-smelling variety is hand-picked at the peak of its blooms, steeped, macerated, and slowly distilled. The fresh, intoxicating aroma of lavender fills the distillery, transforming the summer into an otherworldly experience.
However, the resulting spirit was too strong and harsh to drink.

It was then aged in a glass flask for five years, which resulted in a rounded mouthfeel and a refined, elegant and aromatic depth.

Lavender spirits distilled just for drinking. For all lovers of special spirits.

Lavender is one of the most ideal plants for extracting aromatic, compounds and at mitosaya, we have been distilling spirits from various lavender varieties.

Our very first attempt was in 2019. We used the Lavandula dentata variety, grown organically without pesticides or chemical fertilizers by Naeme in Chiba. Known for its sweet and gentle aroma, the flowers were carefully hand-harvested at the peak of bloom, then macerated and slowly distilled. The distillery was soon filled with a fresh, enchanting lavender scent—transforming the summer into another world entirely.

However, the resulting spirit was so intensely aromatic that it felt too sharp to enjoy as a drink.

So, we left it to mature in glass flasks for five full years. Over time, its sharp edges softened, and the aroma evolved into a refined, elegant bouquet with depth and nuance.

This is truly a lavender spirit distilled for drinking. A special distillate for lovers of extraordinary spirits.
