Made from over 100 different ingredients, this bottle is packed with mitosaya's journey to date. The final part of the distillation process, known as the "tail," is redistilled to create a new flavor. The "tail" that appears at the end of the distillation process loses aromatic components as the alcohol content decreases, but complex flavors such as fruitiness, acidity, and bitterness emerge. The distillation ends when the liquid becomes a pale liquid like water.
Normally, this tail is reused the next time the same ingredients are distilled, but when producing small quantities of many different varieties like mitosaya, it is often the case that there is no identical batch. Therefore, various tails are temporarily stored and periodically re-distilled.
A dozen or so varieties are distilled into one batch, and the tails that come out of that distillation are distilled again... This work, "FRAGRANT GARDEN," was born from this complex and time-consuming process.
Mitosaya's cuvée is made from over 100 different ingredients, including fruits, grains, herbs, medicinal plants, brandy, and seaweed. The flavor is rich with stone fruits and berries. When you put it in your mouth, the nuances of flowers and leaves will reach your nose.

A bottle that encapsulates mitosaya's journey so far, created from over 100 different ingredients. By redistilling the “tails” — the final portion of the distillation process — we have crafted a new and unique flavor.
In distillation, the “tail” refers to the final stage, where alcohol content decreases and aromatic compounds fade. However, this part often contains a more pronounced complexity, with fruitiness, acidity, and bitterness becoming more noticeable. Eventually, the liquid becomes as light as water, marking the end of the distillation.
Typically, tails are reintroduced when distilling the same batch again. But at mitosaya, where production is done in small quantities and with a wide variety of ingredients, the same batch rarely comes around twice. Instead, we collect and tails stores from many different distillations and periodically redistill them.
One batch may include a dozen different components, and even the tails from that batch may be redistilled again. Through these layered and time-intensive steps, this cuvée was born.
Made from over 100 ingredients—including fruits, grains, herbs, medicinal plants, brandy, and even seaweed—this mitosaya cuvée offers a complex yet harmonious experience. Its aroma and flavor suggest deep-stone fruits and berries, gently layered with floral and leafy notes that lift and linger.
