We collected strawberries that were just harvested in our hometown of Otaki little by little and made them into a single product. This strawberry eau-de-vie was only possible because we are in the neighborhood.
Overripe strawberries inevitably occur during the cultivation process. Although they are not suitable for distribution, these bright red ripe strawberries come in a variety of varieties and shapes. They are delicious to eat and perfect for processing.
The soft fruit is carefully placed in baskets, gently crushed, and then placed in the tank. During fermentation, the strawberries that were placed in the tank earlier help regulate the fermentation rhythm, allowing the fermentation to proceed naturally and smoothly.
In order to extract the aroma directly, the fermentation was followed immediately by distillation. Although the ester aroma was quite prominent immediately after distillation, after aging in stainless steel tanks for two years, the aroma changed to a completely refined flavor.
The rich aroma of freshly picked strawberries is mysteriously blended into the clear liquid. Only 4L of liquid was obtained from 22kg of strawberries. This is a very precious eaux-de-vie, with only about 40 bottles produced.

We took a few freshly harvested strawberries from our local Otaki area and made them into one product. This strawberry eau de vie was made possible by the fact that we are neighbors.
What is wonderful about this location, almost in the middle of the Boso Peninsula where mitosaya is located, is that it is surrounded by many fruit trees. Biwa, pear, mikan, lemon, plum, persimmon, and many other fruits are in full bloom throughout the season.
And we must not forget strawberries. Mostly grown in greenhouses, the area is crowded with tourists picking strawberries until Golden Week. However, “overripe” strawberries inevitably appear during the cultivation process. Although not suitable for distribution, bright red ripe strawberries come in a variety of varieties and shapes. They are delicious to eat and ideal for processing.
I visited the strawberry farms from mitosaya every few days and was given strawberries that had ripened to a bright red.
The soft berries were carefully placed in baskets and carried to the tanks where they were gently crushed. Fermentation proceeded naturally and smoothly in the tanks as the strawberries that had been in the tanks earlier set the rhythm of fermentation.
To extract the aroma straight away, we went to distillation immediately after fermentation. Although there was a slight acetic ester aroma immediately after distillation, after two years of aging in stainless steel tanks, the flavor was completely refined.
Only 5 liters of this eau-de-vie was obtained from 40 kilograms of strawberries, making it a very precious eau-de-vie, with only about 40 bottles available.
