This spirit is made using natural rice from Tsurukame Farm , which grows rice, soybeans, and wheat without pesticides or fertilizers in Isumi City, Chiba Prefecture, and sake lees from Kidoizumi Sake Brewery , which is brewed naturally without added yeast or lactic acid bacteria.The lees are then re-fermented in mitosaya and distilled to create a new flavor.
During the re-fermentation process, Isumi pear juice is added to add a subtle sweetness and depth, and fresh lemon peel and leaves harvested at mitosaya are used during distillation.
During the distillation process, the smell of sake lees, aged aroma, and old aroma are removed, and we have created a liquid with a deep, herbal flavor that stands out, with a burnt taste from the Maillard reaction of the aged lees, a caramel flavor, and a fresh lemon taste.
Squeeze some fresh lemon and mix with soda to create a blissful lemon sour. Enjoy this drink that goes well with food or as a relaxing companion.

This spirit is crafted by distilling sake lees from Kidoizumi Sake Brewery, which produces natural, additive-free sake using natural fermentation methods. The sake lees originate from naturally cultivated rice grown without pesticides or fertilizers at Tsurukame Farm in Isumi City, Chiba Prefecture, where rice, soybeans, and barley are farmed with care.
At mitosaya, we gave the sake lees a second life through re-fermentation, adding a layer of complexity by incorporating fresh pear juice from Isumi during the process, enhancing its subtle sweetness and depth. During distillation, fresh lemon peels and leaves harvested at mitosaya are included, enriching the spirit with a vibrant herbal depth.
Squeeze fresh lemon into this spirit and top it with soda to create the ultimate lemon sour. Whether paired with your favorite dishes or enjoyed during moments of relaxation, this drink is an excellent companion.
