This spring, we visited Teshima in Marugame City, Kagawa Prefecture. It is a small island with a population of only 17 people, an hour and a half by ferry from Marugame Port, but we spent three stimulating days here, surrounded by rich nature and unique people. The youngest resident, Mr. Takahashi of Teshima Koshinan , moved to Teshima to cultivate Kagawa's specialty chili pepper, "Kagawa Hontaka," and is exploring the possibilities of doing so.

When I was shown his farm, I saw neatly arranged rows of rows and meticulously planted seedlings. Although the chili peppers had not yet produced fruit, it was a sight that made me look forward to watching them grow.

In August, Takahashi-san delivered red, ripe Kagawa Hontaka peppers. They are the size of a thumb, and have a rich flavor that spreads throughout the peppers despite their strong spiciness. After much trial and error, in order to bring out the unique characteristics of Kagawa Hontaka, we arrived at the Koregusu style, in which the peppers are soaked directly in the distilled liquor made by mitosaya.

Kagawa Hontaka, steeped in mitosaya's aged agricultural rum, has a deep, stimulating flavor. Try it on the rocks or in a punchy cocktail such as a rum coke.
Enjoy it with GREEN SMOKE made with green chili peppers.

The youngest resident, Mr. Takahashi , moved to Teshima to grow Kagawa's specialty chili pepper, “Kagawa hontaka,” and is pursuing its potential.

When we visited his farm, we saw neatly lined ridges and meticulously planted seedlings, and although the peppers had not yet borne fruit, we were looking forward to their growth.

In August, Mr. Takahashi delivered red, ripe Kagawa hontaka chili peppers. The peppers were about the size of a thumb and had a full-bodied flavor with a firm spiciness. After much trial and error to bring out the unique character of this Kagawa hontaka, we arrived at the cola goose style, in which the chili is directly soaked in the distilled liquor made at mitosaya.

Soaked in the agrikor rum being aged at mitosaya, Kagawa hontaka has a deep and pungent flavor. Try it on the rocks by all means, or in cocktails such as a punchy rum coke.
