Since starting mitosaya, we have been making fig brandy every year from Kawajima Town, Saitama Prefecture.
In 2023, we will once again go to pick up the large Masui Dauphins prepared by the Kawashima Town Fig Producers Association at the beginning of August and prepare them immediately.
Approximately 1 ton of figs were delivered in several batches. They were perfectly ripe, with the highest sugar content and aroma, and soft enough to be easily crushed by hand. The surface was slightly moist, and vigorous fermentation immediately began. The fresh, juicy aroma gradually changed to a sweet, heavy aroma containing alcohol. After fermentation had progressed sufficiently, they were distilled in several batches.
It was aged for 10 months in old oak barrels that are used to age FIG CASK every year.
The distinctive green color of the figs is softly combined with the wooden barrels.

This time, we made a blend of fermented fig leaf tea, brewed in cold water, and the sweet aroma of the fig leaves gently dilutes the alcohol.
An elegant symphony of sweetness and aroma. An eau-de-vie made using the whole fig through two fermentations.

Enjoy it as an aperitif or after-dinner drink, or as an accompaniment to adult conversation.

Since we started mitosaya, we have been making fig brandy every year from figs grown in Kawashima-cho, Saitama Prefecture.
At the beginning of August, we go to pick up the large Masui Dauphins prepared by the Kawashima-machi Fig Growers Association and immediately start preparing the brandy. The one-ton figs, delivered in several batches, are at the peak of their sugar content and aroma, and are so soft that they can be easily crushed by hand. They are slightly moist on the surface and immediately begin ferment to vigorously.

About one month from the beginning of August. The fresh, lush aroma gradually changes to a sweet, heavy aroma with alcohol. After fermentation has progressed sufficiently, the wine is distilled several times.
The wine is aged for 10 months in oak barrels, which were also used to age FIG CASK last year.
The sweetness of the wooden casks is softly combined with the unique greenness of figs.
In addition, fermented fig leaf tea extracted in water is used for dilution. A concerto of elegant sweetness and fragrance, this eau de vie uses all of the figs through two fermentations.

Enjoy it slowly as an aperitif or after-dinner drink, or as an accompaniment to adult conversation.
