This grappa is made from the pomace of wine made with Kyoho and Himrod grapes at Le Bois d'Azur, a winery in Tsukuba City, Ibaraki Prefecture. After training in Jura and Burgundy in France, Aoki-san opened a winery in his hometown of Tsukuba City, Ibaraki Prefecture, upon returning to Japan. At Le Bois d'Azur, which means "blue forest," abandoned farmland at the foot of Mount Tsukuba is reclaimed, grape seedlings are planted, and wine is brewed using table grapes such as Kyoho and Himrod grown at his parents' home. We were greeted by a press machine at the winery, which was converted from his parents' garage.

The large Kyoho grapes retained their aroma even after they were pressed, so we brought the grapes home with us, the aroma still wafting through the air in the car, and distilled them while they were still fresh. We then aged the grapes in a glass flask for a year.

This grappa is smooth, sweet, and easy to drink, as if the ingredients had been liquefied.

This grappa is made from the pomace of wines using Kyoho and Himrod grapes from the winery le bois d'azur in Tsukuba City, Ibaraki Prefecture. Aoki-san, who trained in Jura and Burgundy, France, returned to Japan and opened a winery in his hometown of Tsukuba City, Ibaraki Prefecture. The winery, named "le bois d'azur" meaning "blue forest," has reclaimed abandoned farmland at the foot of Mount Tsukuba, where grape seedlings have been planted. Using table grapes such as Kyoho and Himrod, which were grown at his family's farm, they have been making wine. We were welcomed along with a press machine that sits in the remodeled garage of his family home.

The large Kyoho grapes retain their aroma even after being pressed, filling the car with their fragrance on the way home. These were distilled while still fresh and aged for a year in glass flasks.

This grappa is smooth and sweet, with a flavor that feels as though the ingredients have been turned directly into liquid.
