A small but flavorful eau-de-vie made entirely from kiwi fruit.
Kiwifruit grown in Nasu, Tochigi Prefecture, which is said to be near the northernmost cultivation area in Japan, is characterized by its sour taste and strong fragrance. Mr. Hasegawa, whose family has been cultivating kiwifruit here for three generations, gave us some kiwifruit picked at the end of autumn.
As always, I don't know how the sorting process works, but they sort 400 kg of the smallest size fruit that will not be shipped.
After careful ripening, The skins and skins are crushed and fermented. Some of the fruit is set aside and left to ferment further.
After a fermentation period of approximately 8 weeks, it is distilled in three batches and aged in stainless steel tanks.
It has a fresh flavor and a dry taste with a deep aftertaste. Perfect as an elegant after-meal drink.

Mr. Hasegawa, whose family has been growing kiwis in this area for three generations, gave us kiwis picked at the end of autumn. As usual, I do not know how the fruit selection process works, but he gave me 400 kilograms of the smallest size kiwi, which are not used for shipping as fruit. After slow ripening, the kiwis were crushed and fermented with their skins. Some of the berries were separated and fermented further with the skins intact. After about 8 weeks of fermentation, the wine is distilled in three parts and aged in stainless steel tanks.
The wine has a fresh flavor and dry taste. It has a deep aftertaste. Enjoy it as an elegant after-dinner drink.
