Genuine Vanilla Extract

This is a genuine vanilla extract made by mitosaya and Co-En Corporation , which imports vanilla grown in an environment close to the natural forests of Madagascar.

It all started when I was talking to a pastry chef and he told me that vanilla extract often contains artificial flavorings and so he rarely uses it.

Vanilla essence but artificial flavoring?
Come to think of it, I realized I knew nothing about vanilla extract.

After some research, I found that in the United States, to be called pure vanilla extract, the Food and Drug Administration (FDA) stipulates that it must contain a minimum of 100g (!) of vanilla beans per liter of 35% alcohol.

There are no regulations regarding the alcohol that can be used, but at mitosaya we used aged Muscat Bailey A brandy.
The amount of vanilla was 100g per liter of brandy. The alcohol content of the brandy was 50%, and the amount per alcohol content was much higher than the FDA standard, and the brandy was steeped for 90 days.

The result was a new liquid that was far more fragrant than any vanilla extract available up until now, and was also delicious to the palate.

It's great to use it as the last drop of your dessert. It also contains plenty of vanilla beans, so it looks great too.
Also, since it is not sweet, it can be used as a fragrant bitters in cocktail making.

I looked it up and found that in order to call it pure vanilla extract in the US, the Food and Drug Administration (FDA) requires that it must contain at least 100 grams of vanilla beans per liter of 35% alcohol in solution.

There are no regulations regarding the alcohol used, but we use Muscat Bery A brandy that is being aged at mitosaya. The alcohol content was set to 50% and the vanilla was macerated for 90 days at 100 grams per liter, 40% more than the prescribed amount per liter.

The result is a vanilla extract that is far more aromatic and mouthwatering than any vanilla essence ever produced.

We believe you will appreciate the effect when you use it as the last drop of vanilla in your desserts.

It can also be used in cocktail making as an aromatic bitters since it has no sweetness.
