静岡県牧之原市のいちご農家から届いた白いちご。薄くピンクに色づいた透明感のある果実がとても美しい。穏やかな甘さと酸味、キャンディのような甘い芳香が特徴的です。

5月中旬に届いた白いちごのへたを丁寧に取り、粗く潰して発酵させます。二日後には高泡が立ち、順調に発酵が進んでいるのがわかります。発酵が落ち着いた2週間後に、フレッシュさを残したまま蒸留しました。

香りを引き出すためにゆっくりとライススピリッツに漬け込んだ後に蒸留したパートとブレンドし、白いちごの魅力を凝縮した透明の液体ができました。

今回はさらにマルベリーとラズベリーのスピリッツを加えて、3種のベリーのリキュールにしました。

甘さはさっぱりとした甘みが特徴の有機ブルーアガベから作られたアガベシュガーのみ。

イメージしたのは、イタリアのカンパリ社が以前製造していたコーディアル・カンパリ。香りはもっと華やかに、いちごの味わいがしっかり感じられる甘さともいいバランスです。

グラスで飲むのはもちろんジェラートでも、その豊かな香りをお楽しみください。

White strawberries from farmers in Makinohara City, Shizuoka Prefecture. The transparent fruit with a light pink color is very beautiful. They are characterized by their mild sweetness, acidity, and candy-like sweet aroma.

White strawberries arrived in mid-May. The stems are carefully removed, roughly crushed, and fermented. Two days later, high bubbles appear, indicating that fermentation is proceeding smoothly. Two weeks after the fermentation has settled down, it is distilled, leaving it fresh.

Blended with the part that was distilled after slowly soaking in rice spirits to bring out the aroma, a clear liquid with all the charm of white strawberries was created.

This time, we also added mulberry and raspberry spirits to create a three-berry liqueur.

The sweetness is exclusively agave sugar made from organic blue agave, which has a refreshing sweetness.

The image was inspired by strawberry cordial, which was sold by Campari in Italy until around 1980. The aroma is more floral and has a nice balance of sweetness with a strong strawberry flavor.

It can be drunk by the glass or served with dessert. Enjoy its rich aroma.
