Katsushige Yamamoto Olive Farm is a farm that cultivates olives in Makinohara City, Shizuoka Prefecture. They grow seven varieties of olives without pesticides on a field of about 2,500 square meters.

The moment olives are harvested, they begin to oxidize and ferment, so it is best to extract the oil as quickly as possible without exposing them to air. Ideally, the olives should be extracted within 24 hours, and preferably within 8 hours. However, Yamamoto-san extracts the oil within just 4 hours of harvesting.

In October, Yamamoto-san sent 15kg of olives to mitosaya after squeezing the oil, which was delivered in a sealed bag to prevent air from entering. When I opened the bag, I was greeted by a vivid freshness, as if the green aroma stored in the olives was released all at once. The olives were distilled after being soaked in rice spirits with reduced alcohol content.

The liquid after distillation has a fresh yet ripe aroma, reminiscent of salted olives. It has the distinctive nutty aroma of Arbequina olives.

It's clear and colorless, and dry, but you can definitely taste the olives when you drink it. It's a liquid that allows you to enjoy the charm of olives in a way that's different from olive oil.
Enjoy it slowly by the glass, or use it to add a boost to a margarita with an olive, or to flavor dishes and desserts.

Katsushige Yamamoto Olive Farm grows olives in Makinohara City, Shizuoka Prefecture. On a plot of approximately 2,500 square meters, they grow seven varieties of olives without pesticides. Oxidation and fermentation begin the moment olives are harvested, so the ideal is to turn them into oil as quickly as possible without exposing them to air. In October, Mr. Yamamoto delivered 15 kg of olives to mitosaya after they had been pressed into oil in a sealed container to prevent air from entering. The bag was sealed to prevent air from entering.

When we opened the bag, we were surprised by the intense freshness, as if the blue aroma that had been stored in the fruit was released all at once.

The olives are slowly macerated in rice spirits with a lowered alcohol content before being distilled.

After distillation, the liquid smells like perfectly ripe, salted olives, with a sense of maturity added to the freshness. According to Yamamoto, it has a characteristic nutty aroma of the arbequina variety.

This liquid offers a different olive appeal from olive oil. It is clear, colorless, and dry, but if you drink it, it is definitely olive. We hope you will enjoy it slowly in a glass, and also use it to flavor dishes and desserts.
