Hand Dug Roasted Local Nuts

This is a distilled liquor made from peanuts, a specialty of Chiba. The variety we chose is Chiba Hantate. Although small, they have a rich flavor and sweetness, and are also known as the king of peanuts. We harvested Chiba Hantate grown in Otaki and dried them in the sun. A few days later, together with the participants of FARMING FRIDAY, we made botchi. Botchi is a method of piling peanuts in the open for drying and aging. They are piled up in a cylindrical shape with the stems and leaves on the outside and the pods on the inside, leaving gaps inside for ventilation. After about a month, the height of the botchi is about 2/3, and as the nuts dry, the bitterness disappears and the starch turns to sugar, increasing the sweetness. After selecting only the nuts and peeling them, they are roasted over an open flame. They are soaked in spirits and then distilled. They are aged in oak barrels for two years. When we harvested the peanuts, the truck bed was full of them, but after drying, aging, and distillation, only a small amount was produced. However, it is packed with the delicious flavor of peanuts. You can enjoy the light aroma and deep flavor of the rich peanuts, making this a distilled liquor that is unique to this region.
You can enjoy it straight, or on the rocks. Its light aroma and deep flavor go perfectly with nuts and cheese. The natural sweetness of the peanuts is especially appealing when paired with salty snacks.

This is a distilled spirit made from Chiba's famous peanuts. The variety chosen is Chiba Hantaka, which, despite its small size, has rich flavor and sweetness, and is known as the king of peanuts. Chiba Hantaka grown in Otaki is harvested and sun-dried. A few days later, together with participants of FARMING FRIDAY, we made "bocchi." Bocchi is a method of piling up peanuts for drying and aging. Stems and leaves are placed on the outside, pods on the inside, creating gaps for ventilation as they are stacked into cylindrical shapes. After about a month, the height of the bocchi is reduced to about two-thirds, bitterness is removed as the nuts dry, and starch turns into sugar, increasing sweetness. After selecting only the nuts, shelling them, and extracting the kernels, they are roasted over an open flame. The kernels are then soaked in spirits and distilled, followed by a two-year aging period in oak barrels. Harvested peanuts originally filled the truck bed, after drying, aging, and distillation, only a small amount of product remains, but it is packed with the condensed deliciousness of peanuts. Enjoy the light, toasty aroma and deep flavor of this unique local distilled spirit.
While it's great to enjoy straight, it's also recommended to savor it on the rocks. The light toasty flavor and deep richness pair excellently with nuts and cheese. Especially when paired with salty snacks, the natural sweetness of the peanuts is further enhanced.
