秋の訪れとともに、mitosayaのあちらこちらで咲き始める金木犀を使った蒸留酒です。ファーミングフライデーチームが力を結集し、つぼみから咲き始める絶妙なタイミングで収穫し、あの香りをボトルに封じ込めました。

完熟した桃を思わせるようなまろやかで甘い香りは、秋の訪れを感じさせるたまらない香りですが、実は多くの虫たちにはこの香りが苦手なのだそうです。受粉のためでもなく、ただただ甘く切ない香りを漂わせる金木犀の姿が健気で愛おしく感じられます。

一日に摘んだ花の重さはわずか2キロ程度。それを両手で持つとずっしりと感じられるその美しいオレンジ色の花々を、色のない蒸留酒にするのは少し罪悪感さえ覚えますが、この芳香を凝縮して残すことができるのは、蒸留ならでは。

蒸留した液体は一年間ステンレスタンクで熟成させ、ボトリングの際には今年収穫したばかりの金木犀の花をボトルに沈めています。今年は昨年より花の量を増やし、液体の中で踊るように浮かぶオレンジの花々を視覚でもお楽しみいただけます。

This is a distilled spirit made from the golden osmanthus that begins to bloom here and there in mitosaya with the arrival of autumn. The Farming Friday team gathered all their efforts and harvested them at the perfect time when they start to bloom from the buds, and sealed that fragrance into the bottle.

The mellow, sweet aroma, reminiscent of ripe peaches, is an irresistible reminder of fall for us, but in fact, many insects have a hard time with this scent. The golden osmanthus, which is not for pollination, but simply for its sweet and wistful fragrance, is healthy and endearing.

The weight of flowers picked in one day is only about 2 kg. It is even a bit of a crime to turn these beautiful orange flowers, which feel so heavy when you hold them in both hands, into a colorless distilled liquor, but only distillation can preserve this aroma in a concentrated form.

The distilled liquid is aged in stainless steel tanks for one year, and at the time of bottling, we submerge flowers of golden osmanthus flowers just harvested this year into the bottle. This year, the amount of flowers has been increased from last year, so that the orange flowers floating like dancing in the liquid can be enjoyed visually as well.
