昨年の10月、ぶどうの産地として知られる山梨県韮崎市穂坂町の畑でぶどうを収穫させてもらいました。手塩にかけて育てられた甲州は紫がかったピンク色の実がなんとも美しい。450キロをmitosayaハーベスト号に積みその日のうちに持ち帰り、翌日に手作業で除梗。

発酵が始まるまでは、実を実は潰さずに発酵を待ちます。発酵がはじまると自重で潰れた果汁をタンクの下から抜き、上にかけます。紫藝醸造の原田さんのアドバイスのもと、オレンジワイン的な手法で醸した後に実を潰し、その後手で搾りました。

こうして絞ったもののワイン部分は蒸留しブランデーになりますが(製品までもう少々お待ち下さい)、今回は搾った皮の方です。

こちらも皮だけでしばらく発酵させた後に、蒸留しました。生食用にも用いられる甲州らしいほのかに甘みのあるクリーンな味わいです。

初夏に黄色の花が咲く、他にはない特徴的な香りと美しい葉の形のハーブ、ヘンルーダ(ルータ)を瓶に沈めました。 清涼感のあるこの時期に最適のグラッパです。

Last October, I had the privilege of harvesting grapes at a vineyard in Hosaka-cho, Nirasaki City, Yamanashi Prefecture, which is known for its grape production. We loaded 450 kilograms of Koshu grapes onto the mitosaya Harvest and brought them home the same day.

The berries are not crushed until fermentation begins. When fermentation begins, the juice, which has been crushed by its own weight, is drained from the bottom of the tank and poured over the top. Under the advice of Mr. Harada of Shigei Brewery, the berries were crushed after being brewed using an orange wine-like method, and then pressed by hand.

The wine part of the squeezed fruit is distilled into brandy (please wait a little longer for the product), but this time it is the pressed peel.

The skins were left to ferment for a while and then distilled. It has a clean taste with a hint of sweetness typical of Koshu, which is also used for fresh food.

The bottle is filled with the herb Henruda (Lutha), which blooms in early summer with yellow flowers and has a unique and distinctive aroma and beautiful leaf shape. This is the perfect grappa for this time of year with its cool and refreshing taste.
