Copenhagen restaurant Noma held a pop-up event in Kyoto called " We created an original liqueur called "YUYU" to go with " Noma Kyoto ." It took us a year to answer a request to create a Nordic bitter drink using Japanese ingredients.
We also had several blended teas made using ingredients harvested at mitosaya used in our non-alcoholic menu items.
YUYU
YUYU is a liqueur by mitosaya that combines Northern European bitters with traditional Japanese herbal liquor. It is named after the word "Yuyu" by the ancient Chinese philosopher Zhuangzi. This word represents freedom and peace of mind, as well as harmony with nature.
From winter to summer, we gradually added seasonal fruits and herbs that we came across in our daily work to the tank. The characteristic bitterness comes from the herb Hikiokoshi (prolonged life herb). According to a legend dating back to the 8th century, the monk and poet Kukai came across a sick monk on the road and gave him the juice of this herb, which instantly cured him.
YUYU not only improves your health but also brings peace of mind to your daily life.

Responding to their request to craft a Nordic-style bitter developing using Japanese ingredients, we spent a year the perfect solution. Additionally, several non-alcoholic menu items featured blended teas made with ingredients harvested at mitosaya.
YUYU
YUYU is a liqueur made by mitosaya, created by fusing Scandinavian bitters with traditional Japanese medical herbal liquors.Its name is taken from the ancient Chinese philosopher Zhuangzi's word “Yuyu”, which means freedom, tranquility and harmony with nature.
Seasonal fruits and medicinal herbs from our garden and surrounding forests were gradually added to the tank from winter to summer. Yuyu's bitterness comes from hikiokoshi. According to the legend dating back to the 8th century, buddhist monk and poet Kūkai came across an ascetic who had fallen ill along the road and gave him the juice of this herb, immediately curing his ails.

Ceramic artist and painter Takanaka resides atop a mountain overlooking a lake in Otaki, Chiba Prefecture, where he creates art surrounded by livestock and wildlife.
