Deepen your knowledge of distillation and become familiar with the lifestyle of enjoying distilled spirits. We are starting a podcast on the theme of "distillation," run by distiller Hiroshi Eguchi.

When I started mitosaya, I realized how little information there was about distillation. I created a content called "The Distillers Year" and recorded my daily life with the hope that the experiences I had had up until setting up a distillery in a completely unknown situation could be of help to those who aspire to become distillers.

One post that received a huge response was, "Why is there so much book and information about fermentation, but so little information about distillation?" This was inspired by a simple question, and I wrote an episode called "Book Guide for Distillers," in which I collected and reviewed books related to distillation.

Using a technique called "distillation," we can extract a special drop from something found in nature. Although the process is extremely simple, it requires the selection of ingredients, several processes, and a sense of style. In the world of distillation, which is born from the interaction between nature and humans, there are many outputs, and there are as many people as there are people. Furthermore, distillation condenses flavors, reduces volume, and almost completely eliminates factors that cause deterioration such as oxidation and spoilage. In other words, it can be stored for a long time and is easy to carry. These characteristics also lead to it being able to be aged for a long time, and the deepening of flavor that occurs over time and the stories that are born in the process are also part of the appeal of distillation.

Of course, raising a glass and enjoying a conversation is also an action unique to distilled spirits. Enjoying distilled spirits over time, with or after a meal. Thinking of the brewer and the nature beyond. There is a culture of enjoying life around distilled spirits. I would like to talk about the appeal of distillation in the technical aspects that I can only talk about because I am involved in distillation, and use distillation as a starting point for conversations with people involved in everyday life in general.
