長野県須坂市で採れたネクタリンを使ったフルーツブランデー。
ネクタリンは桃の変種で、桃のような毛が無く滑らかな果肉で皮ごと食べられます。桃に比べて酸味が強いのが特徴。 100キロのネクタリンを2つに分け、ワイン用の酵母と、日本酒用の酵母の2種類使って発酵具合を比べながら行ってみます。どちらも活発に動き、ツンとしたアルコール臭が落ち着いた2週間後にはアルコール度数も10%に到達。 蒸留後ガラスのフラスコで熟成しました。
甘さはないはずなのに、香りから確かに感じるふくよかな甘さ。 「WHITE ICHIMIYA PEACH」とぜひ比べてみてください。

This is a fruit brandy made from nectarines grown in Suzaka City, Nagano Prefecture.
Nectarines are a variant of peaches, and can be eaten skin and all, with smooth flesh and no hair like peaches. Nectarines are characterized by a higher acidity than peaches. We split 100 kilos of nectarines into two and try to use two types of yeast, one for wine and the other for sake, to compare the fermentation. Both are active, and the alcohol content reaches 10% after two weeks, when the pungent alcohol smell has settled down. After distillation, I aged it in a glass flask.
Although it is not supposed to be sweet, you can definitely sense the rich sweetness from the aroma. Please compare it with ""WHITE ICHIMIYA PEACH"".
