5月の風に、この庭では柑橘の花の香りがのってなんとも気持ちのよい匂いに深呼吸したくなります。白い可憐な花をつけた木々にみんなで並び、ある日に花をたくさん摘みました。

その白さはあっという間に褪せてしまうから、すぐさまレモンの水につけ、ゆっくりゆっくり、砂糖で煮ていきます。摘んだ指先が黄色く染まるほどにこの時期の花には花粉がたっぷりふくまれていますから、それを煮出したシロップは花粉の味、はちみつよりもストレートに花の蜜感を感じることができます。ほんの少しシロップをスプーンですくって召し上がるだけで、後の後まで口の中に余韻が残るほどの香り。花びらもきゅっとした楽しい食感です。

The breeze in May makes me want to take a deep breath in this garden with the smell of citrus blossoms and what a pleasant smell it is. We all lined up at the trees with their lovely white blossoms and picked many of them one day.

Their whiteness fades quickly, so we immediately dip them in lemon water and slowly, slowly, boil them in sugar. The flowers at this time of year are so full of pollen that the tips of the fingers are stained yellow, so the syrup made by boiling them has the taste of pollen, and you can feel the nectar of the flowers more directly than honey. Just a small spoonful of the syrup is enough to leave a lingering aroma in the mouth until later. The petals also have a delightful texture with a tight squeeze.
