毎年恒例となった川島産いちじくのブランデー。蒸留後のもろみには、しっかりとした甘い香りと発酵による爽やかな酸味が残ります。
その味わいを活かすべく作ったのがこのもろみソースです。甘くて、酸っぱくて、ちょっと辛い。このバランスに加えた酒粕が、ふわっと香ります。
冷たい状態でお肉や魚の漬けだれとして使っていただくのもよいのですが、このソースはそのままを、お鍋のたれに使っていただくのがおすすめです。温かい具材をいれると、酒粕の香りが湯気でより引き立って、とっても美味しいですよ。寒い時期のお鍋に、ぜひご活用ください。
