庭に育つ夏みかんをどっさりと収穫しました。お手伝いをしてくださる友人やスタッフたちと協力しあい、皮をむき、果汁を絞り、茹でこぼす、並べて乾かすなどの作業を経てやっとたくさんのピールが出来上がります。柑橘のお菓子は、目に見えてこない、たくさんの地味な作業の積み重ね。艶々のピールはその賜物です。
しっかり糖度を蓄えたピールは中は透明感がありしっかりとしたゼリー菓子のようで、噛んでいくほどに夏みかんのほろ苦さ、爽やかな酸味が口の中に広がります。

We've harvested a bountiful amount of summer oranges from our garden. Through collaborative efforts with friends and staff who kindly lent a hand, we managed to peel the fruits, extract the juice, blanch, and then dry them. The process of making citrus confections involves many unseen and modest tasks. The glossy peels are a testament to this diligent work.

The peels, rich in sugar content, have a translucent quality and a texture reminiscent of firm jelly candies. As you chew, the slightly bitter taste and refreshing acidity of the summer oranges gradually unfold in your mouth. "Herb" is a variant with the granular texture of raw sugar, enveloped in the sweet aroma of fennel. These are perfect to pop in your mouth like candy whenever the mood strikes.
