mitosayaでは、さまざまなラベンダー品種から蒸留酒をつくっています。

2019年、一番最初に取り組んだのは、苗目で無農薬・無化学肥料で栽培された「デンタータ」品種のラベンダー。
甘い香りが特徴のこの品種を、花の最盛期に手摘みし、浸漬・マセレーション（浸出）したのち、ゆっくりと蒸留しました。蒸留所内には、夏を別世界の体験へと変えてしまうような、フレッシュで魅惑的なラベンダーの香りが広がります。
ただし、出来上がったスピリッツは、あまりにも鮮烈で、飲用には刺激が強すぎる印象がありました。

そこで、その後5年ものあいだガラスフラスコで熟成させた結果、口当たりは丸みを帯び、洗練された上品さと奥行きのある芳香へと変化しました。

まさに飲むために蒸留されたラベンダーのスピリッツ。特別な蒸留酒を愛するすべての人へ。

Lavender is one of the most ideal plants for extracting aromatic compounds, and at mitosaya, we have been distilling spirits from various lavender varieties.

Our very first attempt was in 2019. We used the Lavandula dentata variety, grown organically without pesticides or chemical fertilizers by Naeme in Chiba. Known for its sweet and gentle aroma, the flowers were carefully hand-harvested at the peak of bloom, then macerated and slowly distilled. The distillery was soon filled with a fresh, enchanting lavender scent—transforming the summer into another world entirely.

However, the resulting spirit was so intensely aromatic that it felt too sharp to enjoy as a drink.

So, we left it to mature in glass flasks for five full years. Over time, its sharp edges softened, and the aroma evolved into a refined, elegant bouquet with depth and nuance.

This is truly a lavender spirit distilled for drinking. A special distillate for lovers of extraordinary spirits.
