山口県萩市、かものはら果樹園から届いたシナノスイートを使ったアップル・ブランデー。この果樹園では、石灰ボルドー液のみを使用した無農薬でリンゴを栽培しています。昨年は梅雨から夏の長雨で葉っぱが落ち、糖度が上がらず身も小さくなったために、醸造用として分けてもらいました。
見た目は良くなくてもものの甘みと酸味のバランスが良くおいしい。
彼らの栽培法に習い、醸造も天然酵母だけで、副原料も何も加えないことにします。一週間ほど経ったころからゆっくりとした発酵が進み、酸化を防ぐためタンクにCO2だけを満たして見守ります。
発酵期間を長めにとった後に蒸留。
アップルタルトのような深みのある芳香とドライな味わいが興味深く、少量ながらブレンドせず単一種の製品としました。

This apple brandy is made from Shinano-sweet apples from Kamonohara Orchards in Hagi City, Yamaguchi Prefecture. This orchard grows apples without pesticides, using only lime Bordeaux solution. Last year, due to the long rainy season and summer, the leaves fell off and the sugar content did not increase and the flesh became smaller, so we asked them to share their apples for brewing.
Even though they did not look good, they were delicious with a good balance of sweetness and sourness.
I decided to follow their cultivation method and brew with only natural yeast and no additional ingredients. After a week or so, slow fermentation begins, and the tank is filled only with CO2 to prevent oxidation and to keep an eye on it.
After a longer fermentation period, distillation takes place.
It has an interesting deep aroma and dry taste like apple tart, so we decided to use a small amount as a single product instead of blending it.
